A 6 ft gift table is 18 sq ft of table. It is not 18 sq ft of room: guests queue at it, set drinks on it, and stand in front of it reading cards. The same blind spot applies to people. Vendor meals are the single commonest line a caterer adds after the count is “final”.
This costs each thing in square feet, sums what the programme implies, and reports it in the only unit that matters in a tight room: covers.
